If you have organized corporate banquet, you probably know that in your team you have not only vegetarians, but also vegans. The former do not eat meat (and therefore fish!), and vegans also avoid milk and eggs. Actually many traditional Christmas Eve dishes are meatlessso you can easily compose the right menu. Regardless of whether you choose borscht or mushroom soup, both are served in a meatless version.

Unfortunately, vegans must forget both about noodles and dumplings (eggs). Prepare for them cabbage with mushrooms served separately. It's a warm, filling dish in itself. You can surprise the most fastidious team members and prepare vegan bigos. Masters make it so that it tastes just like meat, including the characteristic crunchiness, for which nuts are responsible here. Serve also a pate made of beans or chickpeas and mushrooms, which will surprise even game lovers with its taste.

For some, sauerkraut and sourdough borscht are obligatory elements of the Christmas Eve table. However, for guests from outside Poland, this can be literally hard to swallow. Especially if they are people from outside Europe who have never heard of this type of food before. Then what?  

It is not about giving up national dishes completely. Dumplings can be found on such a Christmas table, but in a slightly more universal version than those with greaves or traditional ones with cabbage and mushrooms. They can be stuffed with vegetables, groats or lentils - in fact, in many Asian countries such momos, dim sum and samosas are very popular. You can also serve fish such as salmon, trout or cod on the table, instead of salted herring and fish in jelly, which are practically unknown outside our region.

As for the soup, mushroom soup with noodles will be better for foreigners' delicate stomachs than traditional sourdough borscht. Go crazy with Polish cakes, because apple pies, gingerbreads and cakes with poppy seeds are quite well known all over the world.

  • dumplings served individually on toothpicks, like the so-called finger foods; 
  • mini-portions of dough and individual gingerbread cookies;

  • mini-pies with cabbage and mushrooms;

  • tartlets with vegetable salad. 

This approach will allow guests to talk freely. It will also eliminate the number of cups, plates and cutlery you will need to use. At such an event, mulled wine served with orange and spices will be the perfect complement to the Christmas Eve menu for the company.
